Organic gardening Tip of the week 🌱

Even though it's half way through the summer, you can still grow some delicious veggies!

Salad greens like lettuce, spinach and chard are perfect for this time of year.

They thrive as temperatures become cooler and grow quickly, so you can enjoy fresh, home-grown salads all autumn long.

Plus, they don’t take up much space, so you can even grow them in containers on your patio or balcony.

Just make sure they get plenty of sunlight and keep the soil moist.

Healthy Eating 🥗

This month, try our family favourite – Carrot and Coriander Soup!

It’s easy to make and packed with nutrients. Here’s the recipe:

Ingredients:

  • 500g (hopefully organic home grown) carrots, peeled and chopped

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp ground coriander

  • 4 cups vegetable stock

  • Salt and pepper to taste

  • Fresh coriander leaves for garnish

Wonkey Carrots we grew

Instructions:

  1. In a large pot, fry the onions and garlic until soft.

  2. Add the chopped carrots and ground coriander, and cook for another 5 minutes.

  3. Pour in the vegetable stock and bring to a boil. Reduce heat and simmer until the carrots are tender, about 20 minutes.

  4. Blend the soup until smooth, season with salt and pepper, and garnish with fresh coriander leaves. Enjoy!

Gardening teaches kids about responsibility, patience, and where their food comes from.

Plus, they’ll love eating something they grew themselves!
